IMAG1373Even if you are going for a traditional green salad, there are lots of ways to make it a  bit more exciting, and make sure you get a range of vitamins and protein in there, and it fills you up.

I like to add a thinly sliced carrot and red cabbage for some crunch and colour (always aim for a range of different coloured veg, to ensure you get a mix of different phytonutrients and vitamins), some canned pulses such as chick peas or black eyed beans for protein and fibre, and some coriander seeds for little bursts of flavour.
