Strawberry and goats cheese salad

strawb This one is super simple to make and looks great – I got lots of compliments and people asking for the recipe at the barbecue I took it to.

Take some mixed leaves (I used mostly watercress, with some spinach to bulk it out), then add some cut strawberries (ideally you want ones that aren’t too overly sweet or soft), goats cheese and some hazelnuts toasted lightly under the grill (they don’t take long at all, and keep turning them to make sure they don’t burn). I also added avocado but I’m not sure it needed it. And then you want a light dressing that won’t overpower the strawberries, I just used a little olive oil, although you could add a splash of balsamic.
